– ½ cup + 2 tablespoons unsalted butter divided – 1 small onion small diced – 2 stalks celery small diced – 2 cloves garlic minced – ½ cup all-purpose flour – 2 cups whole milk – 3 cups chicken stock – 3 cups chopped broccoli – 1 cup matchstick carrots – ½ teaspoon kosher salt – ¼ teaspoon pepper – 3 cups freshly shredded sharp cheddar cheese  



Melt 2 tablespoons butter in a large pan on medium. Add onion and celery and simmer for 5 minutes until soft and translucent.  


½ cup unsalted butter, 1 small onion, 2 celery stalks Add garlic and sauté another minute. Remove cooked food from pan and set aside.


2 garlic cloves Add ½ cup of flour to the pan and melt the remaining ½ cup of butter. Mix well for about one minute.  


1/2 cup all-purpose flour Keep swirling as you add milk slowly.The mixture should be thick and silky.  


2 cups whole milk Add broccoli, carrots, sautéed onions, garlic, and celery to chicken broth.  


3 cups chicken stock, 3 cups chopped broccoli, 1 cup matchstick carrots The mixture should boil, then reduce heat and simmer uncovered for 30 minutes until the broccoli and carrots are cooked.


Remove from heat and toss in cheese, salt, and pepper until melted and evenly distributed.  


3 cups shredded strong cheddar cheese, ½ teaspoon kosher salt, ¼ teaspoon pepper Return half the soup to the pan after a few short pulses in a blender. A basic Panera dish is served with sourdough bread or in a bowl.
