Keto Carrot Cake - 5 Minute Sugar Free  Recipe

Keto carrot cake with cream cheese frosting is luscious and tender! Quick and quick sugar-free dessert recipe in 10 minutes. Low-carb, gluten-free.   

Carrot Cake – ½ cup / 100g shredded/grated carrot lightly packed – 1 egg – 2 tbsp / 28g butter, melted – 1 tbsp / 15 heavy cream – ¾ cup / 75g almond flour or ground almond – 10 g / small handful walnuts, crushed – 2 tablespoon powdered sweetener – 2 teaspoon cinnamon – 1 teaspoon pumpkin spice – 1 teaspoon baking powder Cream Cheese Frosting – 2 tablespoon full fat cream cheese – 1 tsp powdered sweetener optional


In a small bowl, fork-mix almond flour, cinnamon, pumpkin spice, baking powder, powdered sweetener, and broken walnuts.   


Step 1

Put in the chopped carrot, egg, melted butter, and heavy cream. Use a fork to mix the ingredients together until a batter forms.  

Step 2

Use melted butter or 2 well-greased ramekins to pour the carrot cake batter into. I used a Pyrex bowl.   

Step 3

Put it in the microwave for 5 minutes at 800W or 6 minutes at 700W. Read the notes below the recipe for how to bake it.    

Step 4

Place the cake on a plate upside down and top with cream cheese frosting. If you want, you can mix the cream cheese with powdered sugar too.   

Step 5

Put more chopped walnuts and grated carrots on top to decorate. You could also eat it right out of the dish!
