Tasty Veggie Fried Rice Recipe

This 20-minute vegetarian fried rice recipe has colorful vegetables! This vegetarian fried rice is a quick and easy family-friendly side dish.  

– 3 cups cooked white rice leftover rice is perfect! – 1 tablespoon vegetable oil divided use – ½ cup finely chopped onion – ½ cup chopped carrot – ½ cup chopped red bell pepper – ½ cup frozen pea – 2 teaspoons minced garlic – 2 eggs lightly beaten – 3 tablespoons soy sauce or more to taste – 1 tablespoon toasted sesame oil – salt and pepper to taste – optional: sliced green onions for garnish


In a big wok or skillet, heat 2 tablespoons vegetable oil on medium high.  


Step 1

Saute onion and carrot for 3-5 minutes till tender. Add red bell pepper and sauté 2-3 minutes. Add garlic and sauté 30 seconds.  

Step 2

Add salt and pepper to taste. Remove the vegetables from the skillet, plate them, and cover to keep warm.  

Step 3

Add the eggs to the pan with the remaining teaspoon of oil and stir occasionally and break up with a spatula until scrambled and cooked. Sprinkle salt and pepper.  

Step 4

Mix rice, cooked veggies, and frozen peas in the pan. Add soy sauce and sesame oil and whisk gently until mixed and heated, 3-4 minutes.   

Step 5

Sprinkle salt and pepper and add soy sauce to taste. Garnish with sliced green onions and serve immediately.
